- One cup of boiling and mashed potatoes
- 1/2 cup boiling and mashed cauliflower (optional for added creaminess)
- Add 1/2 cup boiling peas and, optionally, 1/2 cup boiled carrots.
- 1 tablespoon ginger and garlic paste
- 2 tablespoons Pav Bhaji Masala (store-bought or homemade)
- One teaspoon of red chili powder.
- One-half teaspoon of turmeric powder
- One teaspoon of cumin powder.
- Add salt to taste. Use 1 tablespoon lemon juice.
- Fresh cilantro (coriander) chopped for garnish.
- Water, as needed for desired consistency
Preparing the Pav Bhaji:
- Heat oil and butter: In a large pan or tawa, combine 1 tablespoon oil and 1 tablespoon butter over medium heat.
- Sauté onions and bell peppers: Add the finely chopped onions and cook until they are golden brown. Cook the chopped green bell pepper for 2-3 minutes, or until they are soft.
- Add ginger-garlic paste: Stir in the ginger-garlic paste and simmer for 1 minute or until aromatic.
- Cook tomatoes: Combine the diced tomatoes, red chili powder, turmeric powder, cumin powder, and salt. Cook the mixture until the tomatoes are mushy and the oil starts to separate from the masala.
